Sometimes called turtle beans or Mexican beans, black beans are small, ebony gems that cook up soft and creamy, with ivory-colored flesh and a slightly sweet taste. A staple in both South and Central American and Caribbean cuisine, they’re also a favorite go-to protein source for vegetarians and vegans. To shorten cooking time and make them easier to digest, soak black beans before cooking. Rinse first, then place beans in a large bowl and cover with water. Let soak for eight hours, or overnight, in the refrigerator. Drain water and re-rinse the beans. To cook, combine one cup of beans and three cups of water in a large pot. Bring water to a boil, reduce heat, cover partially and simmer for an hour and a half.
