A longtime staple of Mediterranean cuisine fava beans have a nutty flavor & buttery texture in addition to being delicious, they’re super-nutritious, high in protein, fiber, folate & iron.
Sort & rinse. Cover with water & soak overnight. Drain & peel outer skin off each bean. Bring 3 cups water & 1 cup peeled beans to boil reduce, & simmer 35-40 minutes. Drain & Serve.
Suggested Uses:

Great in salads, sautés, risottos, & pasta dishes

Cook simply with olive oil, sea salt & lemon
