Adzuki Beans

With their nutty, sweet flavor, adzuki beans are a versatile and healthy addition to both sweet and savory dishes. An excellent source of protein, they are particularly rich in iron, magnesium and folic acid.
Sort and rinse. Cover with water and soak overnight. Drain. Bring 2 cups water and 1 cup beans to boil, reduce and simmer 1 hour, or until tender. Drain and serve.
Suggested Uses:
• Grind into flour to be added to baked goods.
• Cook with rice, millet, quinoa or other grains.
• Balance flavors with soy sauce, ginger or miso.
