Discussion: KAL Chitosan is fiber derived from the non-digestible, aminopolysaccaride chitin in shellfish. Deacetylation is the process of removing acetyl groups from chitin. This enhances the activity of chitosan, making it more soluble in the stomach. Studies indicate that a diet rich in fiber may help reduce the transit time of foods in the digestive system, so less dietary fat and cholesterol are available to the system.
