Being able to enjoy food, and sharing it with family and friends has always been central to my life.
When the ultimate taste tester, my non-celiac brother, first tried my bread he said, “What’s the big deal? It tastes like bread.” Exactly! As a celiac, type 1 diabetic, and trained chef, I live and breathe the philosophy that safe, allergen-free products can and should taste great.
Our customers are like family to use and we take your health and safety very seriously. We blend all our products in-house in an allergen-free, controlled environment, using only allergen-free certified ingredients. Our facility is USDA and Kosher Certified. To ensure quality and safety, we regularly submit our mixes to lab testing. When we say a product is “free from,” we mean it.
We work closely with, and are proud to support, the Celiac Disease Foundation, the Celiac Sprue Association, the Gluten Intolerance Group, The University of Chicago Celiac Disease Center, and the Center for Celiac Research, among others.

Nutrition matters!
We use a blend of three different bean flours for added protein and fiber (all pre-soaked for easy digestion). Our chia flour is also a rich source of protein, fiber and omega-3s. We do not use refined sugars.
Manufacturing you can trust
We package our mixes in our own dedicated facility, free from: wheat, gluten, soy, rice, nuts (including tree nuts), fish and shellfish.
Ingredients

1 package Apple Pancake & Muffin Mix
-
2 jumbo eggs
-
2½ cups of milk or non-dairy drink (for muffins omit the liquid)

1/3 cup of oil

1 cup of apple sauce (for muffins use 1¼ cups)

1 apple, diced small (optional)

1 teaspoon of vanilla (optional)
It’s easy
» In a medium-sized mixing bowl, combine all wet ingredients and lightly beat
» Add mix and blend until well combined. Fold diced apple into batter
» Pour approximately ¼ cup of batter onto the center of a well-oiled hot pan. Over medium heat cook for 3-4 minutes.
» When bubbles appear on the surface, flip pancakes over for another 2-3 minutes or until golden brown.
To make muffins
Fill standard muffin tins 2/3 full. Bake at 350 degrees for 20-25 minutes. Makes approximately 24 muffins.
Tips and variations

For a thinner consistency add additional liquid 1/3 cup at a time.

A spatula may be used to evenly spread batter in pan.

If avoiding eggs, leave the eggs out altogether. Using an egg replacer will render a gummy texture.

Also makes delicious, light, crispy waffles, apple cake and other great delights.

Store your mix in a cool dry place and it will stay fresh for two years!
