These colorful, quick-cooking lentils have a mild, subtly sweet flavor. Because they break down while cooking, red lentils are perfect for dishes like soups, stews, curries and dips. Red lentils are rich in fiber and provide a wealth of vitamins and minerals, including iron and zinc.
Sort and rinse 1 cup red lentils. Place in a pot with 3 cups water and bring to a boil. Reduce heat to medium low and cook until tender, about 15 minutes. Add more water as needed to keep lentils covered with water while cooking. Makes 4 servings (about 3½ cups).
